With Holland's incredible victory in mind and feeling the effect of all the beers in the rest of your body, you might have the need for some proper food today!
Again, inspired by the incredible amount of asian cooking ingredients in Dutch grocery stores, I though about fine tuning one of my all-time favorites and giving it the right crunch to blow your mind! My secret weapon I lately discovered is called Serundeng but more about this little badass later!
Actually I got the basic recipe from my best friend some years ago when I was planning on cooking for a date. It went slightly wrong back then since I burned the broccoli...was a bit distracted by that time I guess!
But this time I only had eyes for my Crispy Chicken Curry!

But this time I only had eyes for my Crispy Chicken Curry!
To serve 2 people, you'll need:
- one free range happy chicken breast per person
- one broccoli
- basmati rice
- two crushed garlic cloves
- half red chilli
- ketjap manis
- soja sauce
- soja creme ( I used the light version from Alpro Soya)
- salt
- black pepper
- cayenne pepper
- nutmeg
- yellow curry powder
- serundeng ( I used one from Inproba)
- butter
- sesame oil
The little secret of this amazing dish is the marinade and that you leave your chicken in there for a while, best over night!
After you cut your free range happy chicken breast into small pieces and mixed it with a bit of ketjap manis, a crushed garlic clove, half of the chilli and a bit of salt and pepper, put it in the fridge....if you simply cannot wait until the next day, leaving the chicken for at least an hour in the marinade is also fine.
Now cut your broccoli in florets. Heat up a saucepan and add a small piece of butter, let it melt, and add the broccoli. Fry it shortly, add some salt, black pepper, a tiny bit of nutmeg and the other crushed garlic clove. Stir it, so that it cannot burn. Add a bit of water and let the broccoli steam on low heat.
Now heat up another saucepan and add some splashes of sesame oil, add your marinated chicken and fry it until it looks golden. Switch the heat down and add one package of soja cream, stir it around and flavor it with a bit of soja sauce, ketjap manis and of course a lot of yellow curry powder! If you like it a bit more spicy, add some cayenne pepper.
Serve it with aromatic basmati rice.

To add some crunchiness, put some Serundeng over the chicken.
If you are still trying to become friends with the slightly soapy taste of coriander that might be a good start for you!
Serundeng is a mix from grated coconut and peanuts, roasted and mixed with a lot of spices! the one I used is btw without any bad ingredients but you can also make it yourself if you wanna be absolutely sure.

If you wanna crunch it up even a bit more, serve it with cassava krupuk!
Wash it down with a nice big glas of tasty tea or what ever you fancy at the moment...I went again for almond rooibos!
Easy to prepare but heavenly delicious!
