I never liked beer, but since I am studying in the Netherlands and enjoying Dutch student parties I didn't have a choice. There is always a sweet person ordering a beer for you and at one point I gave in and it's actually not so bad. But beer is not only for drinking, you can also create a delicious and absolutely extraordinary dish with it.
This recipe is as easy as drinking some beers with your friends. Today I am going to share with you my Delirious Chicken from the Oven - crunchy, crispy, juicy and tremendously tasty!
This recipe is as easy as drinking some beers with your friends. Today I am going to share with you my Delirious Chicken from the Oven - crunchy, crispy, juicy and tremendously tasty!
All you'll need to serve 4 people is:
- one free range happy chicken
- a small can of beer (33 cl)
- new potatoes (for low carb, use some courgette instead or what ever you fancy)
- carrots
- mushrooms
- one red onion
- one crushed garlic clove
- thyme
- sage
- rosemary
- fleur de sel
- black pepper
- good olive oil
- and of course a crate of beer for the guys
Open your beer can, fill it with some herbs and wrap it in tin foil. Then mix some olive oil with salt, pepper, herbs and the crushed garlic clove and slather your chicken from the inside and outside with the tasty mixture. Stuff your chicken with some more herbs and put it on the beer can. Heat up the oven to 180 degrees and put your chicken upright in the oven for 30 minutes. While your chicken is baking, cut the mushrooms and the onion, and slice your carrots and potatoes. After 30 minutes grab your chicken out of the oven and place the potato slices around it with some olive oil, salt and black pepper. Put it back in the oven for another 30-40 minutes (depends on the oven).
Treat yourself with a glas of white wine (always nice while cooking) or a beer to keep up with the chicken.
After the 30-40 minutes grab your chicken out of the oven again. Now place the chicken horizontally on the oven plate (there might be some beer dripping out of the can, but this creates a nice sauce the veggies can bake in) and top the potatoes with carrots, mushrooms, the onion, some herbs, olive oil, and salt and pepper. Now give your chicken 20 more minutes. To make it crispy and crunchy, grill it the last 5 minutes.
